MINCE AND OTHER ITEMS
Minced meat, thin flanks, ox skirts, mutton skirts, mutton flaps, trimmings and shin meat are to be removed from the list of coupon-free meats, and as from Monday their purchase will require the surrender of coupons. The Minister of Supply and Munitions, Mr. Sullivan, said yesterday that in order to maintain exports of meat to Britain at the highest possible figure, the Har Cabinet lupl given consideration to certain alterations to the schedule of cou-pon-free meats under the Meat Rationing Order. ‘‘When meat rationing was introduced-, minced meat was included in the coupon-free list,” he said. "Unfortunately, this concession has been applied to the extent that cuts of meat not normally converted into minced meat have been widely utilized for this purpose. In fact this practice has developed to such an extent that sales of minced meat have increased alarmingly—so much so that it has become necessary to remove this item from the coupon-free list. In addition such items as thin flanks, ox skirts, unit ton flaps, mutton skirts, trimmings, and shin meat, some of which are also used in the manufacture of minced meat, must of necessity be similarly treated and ac cordingly' these will no longer be couponfree. There has also been a tendency to include in these latter cuts portions of the earcase which are not coupon-free, but which as a result have been sold without coupons, thus defeating the purpose of rationing. “The schedule of coupon-free meats will now consist of canned meat, sausages, sausage meat; bacon, ham; tripe, liver, kidney, heart, tongue, brains, sweetbreads, ox-tails, ox-heel, ox-cheek, cowheel, calf’s head, calf’s feet, sheep’s head, sheep’s trotters, pig’s head, pig’s trotters, pig’s hocks, pork fillets, bones (without meat) ; dripping, suet, small goods, poultry, rabbits, fish, game. “Despite the above amendments, I would like to point out,” said Mr. Sullivan, “that the meat ration will still conform to the minimum requirements originally decided on by our medical authorities as being necessary for the maintenance of good health and are in line with the original recommendations of our medical advisers.”
