3 .111111111111111111111111 K1..8U1 EMERGENCY SANDWICHES Sometimes when unexpected guests drop in to tea or supper the larder Will yield nothing but ordinary food. Here are some suggestions for sandwiches which can be prepared from ingredients always available. Press some grated cheese through a sieve, mix to a paste with a little vinegar, add mustard, salt, cayenne, and butter. Skin and bone some sardines, pound to a paste with the yolk of a hard-boiled egg. butter, lemon juice, and pepper. Put some hardboiled eggs through a sieve, mix with anchovy essence, butter and pepper. Grill some thin rashers of bacon and fry some eggs hard: press the bacon, then the egg, on to hot, buttered toast, coyer with another piece of toast, press with a weight for five minutes, and cuteach slice into four, trimming off hard crusts. Mix smne mashed potatoes with butter, and flavour with tomato or mushroom ketchup, some meat extract, and pepper. Beat smoothly some grated cheese or cream cheese with tomato pulp, mustard, and vinegar.
