KIDNEYS AND BEANS Grill the kidneys. After skin ning them, cut in half, put a skewer through them, and sprinkle them with salt and pepper before putting under the grill for three minutes each side. Grill bacon similarly to serve with them. Soak two tablespoons of haricot beans overnight. Boil till tender in salted water, and drain well. Melt an ounce of butter in a pan, add a quarter of a cup of tomato sauce, and heat the beans in this. Serve with the kidneys and some fried quarter tomatoes.
