POTATO FLOUR
War bread, having been improved, is incentive for establishment of modern ilour plants, says an American writer. Wo all remember the potato bread which came into prominent notice during tho war. It seems to' have quietly disappeared, and one wonders whether tho making of potato bread has really become an established industry. As a matter of fact, it is now struggling for a firm footing, and tho prospects aro bright. Like every other now thing, it was necessary to go through a period of mistakes and uncertainty before a meritorious product was obtained. Tho principal benefit of tho development of tho potato bread industry is that it will provide a market for No. 2's and culls, so that Ihe No. 1 stock may bo passed on to tho consumer for other purposes.
Speaking on this phase, Major S. C. Prescolt, in chiiTge of the dehydration section of tho Bureau of Chemistry, Department of Agriculture, says:—"By tho proper location of potato (lour plants in the regions where potato growing already is a major enterprise, tho utilisation of No. 2 potatoes and culls in the manufacture of potato Hour in time may become an important factor in tho potato business. It might bo altogether possible for a manufacturer lo contract with growers over a series of years to lake all of their crop at a stipulated price, thus enabling the grower to secure a given price in years of heavy production when the crop frequently sells in the spring at prices around the cost of production or below. As I see it, the manufacturer would buy the field-run of potatoes, sort them, market tho No. 1 grade, and use the balance of the stock for making potato Hour."
