' ■ SUGAR. • THE following recipes received have been selected as desirable for publication to assist the public and reduce the difficulties caused by the present shortage of sugar. Fill benzine tin with fruit, complete with cold water, and solder up the hole. Then drive small nail hole in tin. Put tm on the firo and leave until boiling, lieniove tin.from fire am! immediately drop solder over the hole and the trick is done. < When required the contents can bo mado into jam or used for pies, etc. Prepare good sound fruit, notnoo ripe. Place in jars. Pack as tightly as possible. Fill up jars with cold water to within half an inch from top of. the jar, Place the rubber and top on, giving one screw. Plnce the jars in a boiler and fill the latter with cold water up to the necks of jars.: Bring to the boil, and when you seo th'e bubbles rising through the fruit take jars out and screw down tight without raising the lid. See that the rubber is , straight. By this method the fruit rctoinsits full flavour, and all thai is required when wanted for use is to' sweeten the liquid. I preserved tomatoes also in this way, and they do not lose colour or fliiv- , 'our. All fruit can be successfully preserved by simply using boiling water instead of syrup.. • Choose sound fruit, new rings, and clean bottles.'
