"It is again necessary to 'draw attention to the question of effecting some improvement in tho flavour nnd condition of a large portion of .the milk and cream delivered to factories for the manufacture of dairy produce/' say's tho Director of the Dairy Division ,of of Agriculture (Mr. D. Cuddie), ;ii his annual report. •' "For some years past there has beon a decided increase in the .'.quantity of ill-flavoured and inferior .cream produced under the system of separating it on the farms, familiarly known as. the 'home'-sep'aratioif.system/ In- .ft lesser degree tho,.Bamo might bo said" of the whole milk supply. Owing, however, to the daily delivery-of the latter product during the greater part of the season, it does not show, the same extent of deterioration as compared ; with" cream, which is usually held, on the farm for several days all the year round. "Tho causes of this inferiority are well ' : known-, to many of those connected with the. industry, and. therefore need not bo detailed in this report. It is sufficient i to Bay tliat a large portion of tho milk and cream is proddced'iinder such conditions, and allowed to come in contact •with ,dairy appliances on the' farms whoh are so unclean and -unwholesome ns-to. be totally' unfit for the handling of any food product, lot alone one so eusceptiblo to contaminating influence as the valval product of the cow. The per-sonal-inspection of many dairy-farm precrises and milking appliances, separators, etc.. by the Instructors of the Division •dprin£.tho past y„ear Ms again reveled a deplorable want of attention'on the , part. of. some owners to the ordinary laws of cleanliness. ' In fact, there were instances where a shocking state of affairs was discovered which could, no longer be Allowed to continue. Nothing short of immediate condemnation of such appliances .can be agreed to. Unfortunately, the control exercised by the Diyision over conditions of this ■nature is (altogether inadequate, for. the 'simple reason that the officers available for this ciass of instruction or insrpec-' i tion are too few in number. A wider \and fai-reachang extension of this branch of the work is without doubt most ur-. 'gently required, in order that the dairy, .industry of the country may be carried . on undier conditions which will ensure thg'manufacture and export of products' equal to—and, if possiblo, even better than—those of our competitors."
