CLEAN MILK
LESSONS FROM NEW YORK. A report which is of interest in connection with the milk problem in this country has been issued by a committee which inquired into the milk supply of New York (states tho "Daily News"). There all milk for household consumption, grade A or B, is sold in bottles, anil grade C, corresponding to the averageBritish milk, is sold in vessels marked "For cooking purposes." Tho death-rale among New York babies whoso milk came from depots was 42 per 1000 only, against a general deathrate among children of 93 per 1000. Professor M. K. Roseuau says, a gla6J of milk is as nourishing as two largo eggs, five tablespoons cooked cereal, three tablespoons boiled rice, or two slices of bread. Dr. Emmet Holt laid it down that infants under one year require a quart of milk a day;, children botw'jon two and six ono pint as a minimum, and those from six to twelve one pint a day. . Tho committee says'that a rnilk supply is as much a daily necessity as gas and electricity, and even more so. Tho cost of distribution can be reduced through centralising the distribution in a single company or public body.
