EXHIBITION OF BAKERS' GOODS

The third annual exhibition in connection with the conference of the New Zealand STaster Bakers' Association opened to-day, 156 bakers and pastrycooks from all parts Dominion being represented by 995 exhibits. In opening the exhibition the Hon. G. W. Russell said it was fitting that it should be held in Christchurch, as Canterbury was the granary of the Dominion and the centre of the flourmilling trade. He hoped it would not be necessary in future to import wheat and flour from other countries. In the bread section J. A. M'Lennan, Auckland, won the class for upright tin loaf from 90 others. Most of the other awards in the section went to Christchurch and Canterbury bakers, though James Thompson, Dunedin, was third in the barracouta loaf, moulded, and W. H. Kells,_ Feilding, was first in the barracouta tin loaf. J. A. M'Lennan, Auckland, won the challenge, shield, value fifteen guineas, for the" best loaf of bread made with compressed yeast. In the championship the judges were unable to separate F. Wright and P. Dunn, bakers employed by C. E. Boon, Christchurch. Wright was last year's winner in the pastry section. J. H. Murdoch and B. Wilson, both of Napier, were first and second respectively for bun loaf, while B. Wilson was awarded first prize for display of goods 'oakecf on a hot plate. doch was second in sponge sandwich, and J. Thom, Napier, first in sponge roll and second in plain cake. J. H. Murdoch was first in decorated birthday cake and second in shortbread. _ In the apprentices class A. Christieson, Napier, was second in display of small goods. Tho competition was strong in each section.
