Sir,—As a visitor to your city I should like to make a few remarks concerning certain practices obtaining hero regarding the handling of meat. To-day, when walking along Courtenay, I'laco, a cart passed mo containing a. number of carcasses of what were evidently freshly-killed sheep, and 1 was much surprised to see that this meat was being carted through this part of tbe city uncovered, and Uierctoro t,uite open to contamination from the oust and dirt, etc., llying about, especially, as just a little further along the removal of horse manure was taking place from one of the various dumps placed there for its reception. Surely, this is an iniquitous practice and contrary to the city or public health by J laws. If there is 110 law governing the handling of meat, the City Council have not much to congratulate themselves on, and if there should, ho a law existent why is it not upheld? It is a well-known fact that many virulent diseases are contracted owing to carelessness in food handling, and I think a matter of this kind is well worthy of attention.
