An interesting letter h.is recently been received by Mr. W. A. N. Robertson, of the Australian Agricultural Department, from Mr. J. A. Euddick, the dairy and cold storage commissioner at Ottawa. In this note J[r. Ruddick states that auite !)0 per cent, of the cheese made in Canada is obtained from the use of pepsin in place of rennet as a ripening agent. Owing to a well-sustained demand for flte pepsin, the value has, risen to about US' per gallon, at which iprice its value js" now fairly stationary. Referring to the commercial side of the matter, it is stated that the merchants consider the pepsin-ripened cheese quite as good aa that obtained by the use of rennet; and, apart from this opinion, the fact that ■Hie demand is a constantly growing one snsjests -the likelihood that pepsin may entirely' taks the place, of rennet. ■ (
