SOCIAL AND PERSONAL ANSWER TO CORRESPONDENT. Recipe for Making Yeast and Bread. To make home-made yeast, ingredients needed are hall cup hops, three-quarter cup sugar, one quart water, one cup hour, half tablespuonful suit, three-quarter pound potatoes. Boil hops and water together for three-quarters hour;strain and when lukewarm add tho salt, sugar, and stir iu the flour to a smooth thin paste. Keep tho batter iu a warm place fur three days and stir occasionally. Boil the potatoes and rub smooth, and add to the batter. Leavo till neifc day, stir frequently, then strain through a cullender. Bottlo and it is ready for use. To Make Bread.—lngredients: 41b. flour, two tcaspoonfuls salt, about two pints milk and water, two tablespooufuls yeast, ono teaspoon sugar. Method: Dredge flour and salt into a warm basin. Mix the yeast with tho sugar until tho yeast is quito liquid; add half tho milk an dwater, made jus warm. Stir this into the centre of tho flour and make a soft batter with some of the flour. Cover with a warm cloth and leavo in a warm place to rise. Time, about 15 minutes. Make the rest of the milk and water warm and add. Knead the dough until it leaves the hands. Cover with a cloth, put in a warm place to rise. Time, two to three hours. Turn on to a warm board and kuead again. Half fill greased end floured tins, and place again in a warm place till well risen. Bake in a quick oven.
The above recipes are taken from Miss Una Carter's cookery book, and to take away the bitterness from baker's yeast, if used, she gives the following hint:— Place the yeast in a largo basin and fill it with lukewarm water. Stir it well and leave until next dav. Pour, off the wafer and the yeast will be at the bottom.

This evening "Tho Readers," of Kelburn, are to givo a dramatic reading of Sutro's " Mollontravo on Women" in tho Masonic Hall, Boulcott Street, for tho benefit of Tho Terrace Day at tho Wellington Red Cross Shop. Among the readers taking part in tho play are Mrs. Coleridge Misses M. Nicholls, L. Vickerman, Messrs. 11. E. Nicholls, W. Sinun, E. Lawson, and E.. S. Baldwin, most of whom have been heard in previous performances in Wellington. Opportunities of becoming acquainted with the works of anyone- but mediocre playwrights arc few and far between, and should not be missed when they do occur.

Tl'.oro will be. three competitions, a. spongo sandwich and two camisoles (day and evening wear). This should attract a lot of entries and add a substantial sum to tho day's effort. Entries with flic articles aro asked to be sent not laler than 2 p.m. on Thursday afternoon, so that they may be judged and priced before Friday, when they will bo sold for jour Sick and Wounded Soldiers' Fund. Mrs. Nathan will bo glad to have as many entries as possible, and hopes for a willing and ready response.
