CHEESE DISHES ! RECIPES FOR MEATLESS DAYS.' Cheese is an excellent substitute for meat and can'be . used in a variety of J ' ways. Since it is rather dense in substance, it is rendered more djgestible by crating it or' by cooking lightly. ; The following.: dishes are not difficult to make, and ai-e„very palatable, and • nourishing:-— •' Cheese Sausages.—Put Jib. of potatoes (mashed or; nibbedthrough, a sieve) into a pan with loz. .margarine; • pepper and saltv ;and a little ohopped • parsley. Add . a ; little beaten egg, and beat-till smooth. Then stir iridoz. to 2oz. cheese. Cool' the mixture and shape into-sausages. . Coat with beaten egg and bread crumbs: and fry to a golden brown. Drain well and serve on a bed of mashed t potatoes, surrounded by tomato sauce. This dish can be varied by using • macaroni or- rico instead of the pota^ • foes in the sausages. -It can also■ be piled _nu a dish and browned in the • oven.instead of being fried. . Cheese Patties.—Mash 'some cooked ■ potatoes, season well, and add about of .1 their -bulk of grated cheese. (Quantities used are a matter of taste.) Line, some patty pans with - pastry (using 3Joz. of fat to Jib. flour). Put a teaspoonful of cheese mixture into each and bake to a golden brown in -a fairly hot oven., (This 'may be made in a pie dish or on a flat baking •plate if-the small patties are top troublesome.) . : Cheese and Tomato Croutons—Cut two fairly large tomatoes into slices, and .• cut some rounds of bread (about liri." thick) the same size as the .tomatoes.' Pry the bread to a goldm;tr6wn. Put : a- slice of tomato on each • circle ' of bread, then a. circle ofcheese: on .the
tomato, seasoning each. Put on to a buttered tin .and leave in a moderate oven about fifteen minuteß .to heat thoroughly. Sprinkle eaoh. with chopped parsley; serro very hot. Oheese and Tomato Savoury.—Line a dfeep pie dish with Bhort pastry and decorate £Ee edges. Pill with layers of grated chieose/ tomato, raw potato, seasoning eaoh layer carefully. The top layer should be of cheese. Sprinkle with breadcrumbs and bake in- a moderate oven for forty-five minutes or longer, according; to the size and depth of the dish. (Slices of. onion may be added to increase the flavour if desirable!) Cheeso Salad.—Lettuce, watercress, tomato, spring onions, celery, and any other salad m season, may be used.' After preparing arrange them in a bowl .'.50..a5..t0 ..leave a Hollow in the centre... Fill tlits with grated cheese. Pour the dressing over_ the vegetables and de- : comt-e with slices of tomato on the top. _ Rice and Cheese Savoury—Boil some rice in salted water until soft, but not into a pulp.' Drain and dry well and shake up in-the nan with a little margarine, some' orated cheese, and chopped parsley. _ Pile high in the centre of a disli, sprinkle more cheese on the for>. and ner™ hot,.
