THE MILK SUPPLY.
Sir, —Last Wednesday I wrote a lettor requesting one of your contemporaries to publish same. much eliminating, the remainder was relegated to the local and general news, where it would not ho so liable to be seen and read. The subject written about was the shortage of milk. In their comments upon tho matter tliey said the milk was not now being diverted to the cheese factories. _ Allow me to differ from them. It is only since tho action of the Board of Trade in stopping the further advanco of price by the farmers that the shortage lias been so acute. Then, with regard to their remarks that the prohibiting of the making of ice-bream during the time of shortage would not make anj' material difference, I do not know where tliey went'for their information, but either they are very easily- gulled or the comment was very much inspired. The various places where ice- . cream is mnde in Wellington absorb daily about 350 gals. of milk; and of this quantity it would be well within the mark to say 250 gallons are used for ico-cream making, as there are three firms alone absorb not far short of 250eals. daily, one of whom is simplv wholesale ice-cream. Now, I would like to know what' they term material difference. Two hundred and fifty gallons divided into a pint each would mean 2000 customers, many of whom would have willingly given 3d. a pint to get it, not 2-sd.
