It is from "The Queen": A good deal, lias been written 'about saving sugar in jani-malriug ljy the substitution oi' salt, and ft good many irccinc-s Jiavo beta published'. To cut a. iong story short, l found that many of tno rcsipes were muck too salt for my taste. Also, if you boil your jam tor a very long time, and so eyaporato it down, it wastes, and in tne end) costs moro per pound than if you had put in the usual quantity of sugar. 11l tnp end-], used 4lb. of fruit, 'Ah. of sugar, white aiid brown mixed, and ono heapod teaspoonful of salt.. 1 boiled it in tho usual way—i.e., as fast as possible, till a little dropped on a cold plate set firm, or about thirty-live minutes—and the result is a good colour, very good flavour, and has all the appearance of good Keeping qualities'.
