(Br OHANTICLHB.) Preserved Eggs. Some bakers are like some poultry■men, they have their limitations in finance. Some of them would gladly preserve thousands of dozens of eggs at pre. sent prices could tliey spare the capital. To have an abundance of good eggs in preserve is tho hope of every baker, and lie knows how incapable he is of competing in his trade if he has- to depend on buying eggs in winter. How can tho producers help him? Unfortunately, pro. ducers have feed to pay for, and their living on the cash they obtain weekly for their products. Some schema is necessary to assure bakers that ah abundance of' preserved eggs will ba available at a price during the winter. It is safe lo say that 100,000 dozen could be booked for delivery next April, May, and .Tune, if the schema could ;be financed. ,Tc meet both side® a fund is necessarv, from which the producer could be'paid al least an advance of ninepence per dozen. The bakers could pay a deposit, say, of 3d. per dozen on their supply, so that by this means only sixpence or sevenpence a dozen would have to be financed. The problem is one for both sides to mutually adjust. Such an arrangement would kill the importer more quickly than legislation, and producers would encourage the, consumption and use of

Many of them concentrate their aim on numbers rather than quality. Tho contents of the egg never worry them. Provided they are gathered fresh and marketed promptly tliey consider their work is done. The contents of the ejn? are governed by tha nature of the feed. Too many eggs reach the market pale in yolk and thin and watery in white, biit that does not repre. cent a good egg. Slushy fOods, confinement of birds and want of exercise, an absence of maize or green teed 'will cause this trouble. If you want to know what a. good egg, is break a fresh, country egg in a saucer and one of your own production in another saucer, -ukl compare. In the one you note the almost white yolk and;the thin green-tinged white that is not more than the consistency of water. Such' an egg ia useless for, breeding chickens from, and is well down in quality required by bakers. Now.note the country egg. The yolk is firm' and of a rich orange colour, while the white of the egg is thick and firm, and is loath to leave the shell. It is so firm the volk will stand up in proper shape. Such eggs as these are invaluable, to bakers. The producer has the Bystem of marketing quickly, grading to Bize. Now' let him bring up lis quality. Have the birda fed so as to scratch for their grain food. See that green feed is fed daily, and meat meal as animal food. Maize is a fine food, for egg-matter, and should be fed in small proportion. To capture bakers' trade ''producers cannot be too careful. Some tnink anything will do for bakers. That's why the country eggs are brought to the market in suqh a deplorable condition, " and bakers are largely to blame. Had they put their foot down and refused to buy such eggs unless sent forward fresli, clean, and properly packed, *.he whole business would fio transformed. It might increase the price slightly, but it would pay. Half the bakers have no idea of the shortago in coiint, and loss through breaks and rots. One baker who placed an order with the Canterbury Egg Circle for 15,000 dozen first-grade eggs is evidence that' tho old system of marketing is doomed, and fanners must fall into line and market on approved lines
