It was stated by one 'of tlie-largest in-port-mg houses that all-egg pulp nnfspot as iveli as tho large quantities coming- for-, ward had been sold right out. Tho chief buyers have been pastrycooks, caterers, and cako and biscuit . manufacturers. Pulp has been sold at Is. id. to Js. 3d. por lb., and eggs at. Is. Sd. to Js.-led. per dozen for largest grades, vhile suaiJer samples lmve brought proportionately less. When it is considered that there is an import duty of (id. por jnzeu on the eggs aud 6d. ou every 22.90 Z. of pulp —tjiat weight beiug equivalent a dozen and remembering aho l.'ie high freights tliat have to be paid, li is e\ ident that tho eggs must be obtainable at a very low price in China. Jt is stated tliat the bulk of the present ship-1 monb were purcliused at about od. and iu. per dozen. That tho importations have found such a ready market with local buyers is a -tribute to the quality, lhe egg& themselves are' rathsr small,, but well shaped, aud have a* thick 'brown shell. To make doubly sure that buyers obtain satisfaction, importers are willing, to put tho eggs through the "eandling" process before handing them over. .It. is tho pulp, however, that hus -found ■' « particular favour with the ' pastrycooks and for it is guaranteed unadulterated and absolutely free fioin vater and chemicals. Tho pulp *s dene up-in tins, similar in shape to in fi'diuary kerosene-lin, and each containing, iiib. It is estimated that well ov* 2COO tins alone have been placed in the Sydney market during the past couplo of months. Many Sussex Street agents and poultry farmers do not look with f<nour upon fuo importation of e#£.s from China. That .was only to be cspocted. Doubtless, also, they would like to see the duty raised. The importers are, hf'.vcver, momentarily able to offer .reliable geeds, and at attractive prices such vill a I wave find a market.
