With the general rise of prices committees of public institutions have had 6ome new problems to face. One hears of hospital committees put to straits to meet their increased drug bill, and tlie cost of food has been a pressing difficulty. Some of the public committees in England have placed on record a comparison of the cost of maintenance at different periods, and an interesting statement has been furnished by the Surrey Board of Guardians to the effect that the cost per head per week has risen from 4s. 3d. to 6s. Tlie instances which were given of increases under various heads included the following Bread, £322; milk, £2(10; and tea, £85—a trinity which may well cause anxiety to the hard-pressed middle class ratepayer. Tn this institution attempts have been made to effect economies by a change of diet, but "Economy should bo sought," says the "Hospital," "and can certainly -bo found, ratln'r in the preparation and serving of food than in a radical cliango of diet.
