♦ SHORTAGE OF CHEESE-MAKERS. (Bj Tclcßraph.-Sncr.lal Heporter.) Palmorston North, June 22. Phases of tin* war crop up everywhere at the Winter Shoiv. During the National Dairy Convention (which is lifinu held at the PalniersLon North Show), the president, of the National Dairy Association (Air. A. Alorlon) mentioned that among the men who had enlisted was a largo number of skilled ehewto-malters employed in the dairy factories. Air. .Morton said that as litr as could ho seen great difficulty would he experienced in stalling the cheese factories next season. In view ol' tlm fact that, cheese was wanted for I,he Allied armies, the Authorities, Air. Morton thought, mijihl, agree to interfere with the remaining skilled cheese-workers as little as possible. New Zealand cheese was being used at, the rate of 700 tons a week by the Allied armies. It. might even bo desirable for the authorities to see that the factories retained their skilled men. It was stated aI. the conference that, tlio factories had decided to gi\'e a half per cent, of their receipts lo lb" patriotic, funds, and some factories had offered one per cent. As the value ol the dairy produce for the year ending last Alareh was , the patriotic fund should reap a harvest of nearly £50,000 per 3'car IVoin the dairy factories. During the conference Mr. pyalt, ono of the delegatos, sang a patriotic song, on condition that someone took round the hat for tho wounded soldiers. The hat tipped out £500. In his Epeoelt at tho show tlio Prima Minister said that the first and most important of tho requirements of the Empire was men properly trained and munitions of war. All wero proud that New Zealand had done its share, and knew that this country would continuo to do its share. All could not no to tho front, but the l'hnpirc required more clothing, and if we could not talto our stand in the lighting line wo must do our sharo as producers here of what the troops required. Particularly should the men on the land endeavour to produce more meat, butter, cheese, woof, grain, etc. Thev would thereby ho benefiting not only themselves and lltoir own country, hut lite Ampin).
