!Aa interesting development in butter faotories visited by Mr. E. Clifton in San Francisco "is.tie preparation of ice oream. Writing in the "Agricultural Journal,". Mr. Clifton states: "It was explained that at one time it was difficult to secure the necessary quantity of fresh sweet cream during the period of warm weather. With tho rising of the thermometer the consumption of ice cream exhibits an inordinate volume. This is now provided ,for. Fresh, sweet cream is received at. any time and in any quantity.; This is manufactured into butter"that is permittedito remain unsalted. When tlif increased demand comes for'tho ico cream this sweet butter is passed, with a proportion of fresh' milk, through an ermilsifier. The result is fresh cream. This is used for the preparation of the iced product,so extensively consumed by the American people. Cone cups of biscuit material are'made in the factory, and these are the containers for the cream. An enormous street and shop business in ice cream is done all-over America." The Feilding A. and P. Show and RamFair.willbe held during the first week in February. The prize list for the show is on similar lines to last year'e, with the addition of classes for arr. needlework. Very liberal cash prizes are offered, and these aro supplemented by handsome and valuable trophies', many to be won outright. Entries for tho show close on January 15 and for tho ram fair on January 19.
