PRESERVING MEAT

SYDNEY CHEMIST'S INVENTION. ICE DISPENSED WITH. Suspended from the ceiling in a laboratory in. Morphett Buildings, Haymarket, Sydney, are a number of carcasses of sheep, rabbits, poultry, etc. Some of them (states tho "Sunday Times,"/ of Sydney) have been there for almost a. year. Others ivere treated on March 28 last, and are claimed to bo as good as the' clay they wero killed; and ill not a single instances has ice been used in their, preservation. The inventor is Mr.' F. Easson, of the Sydney Erection Co., and it has taken him only twelve mouths to perfect an idea that promises to revolutionise the meat preserving industry. His process is as simple, as ii is effective, and consists solely of generating the gasos contained ill'salt, and putting them into concentrated form. ■ The articles to be preserved are then placed in a room, and subjected to the fumes from the mixture -
