Ellison,. expressing opinions on tho quality and market value of sample crates of cheeso that "had been received by them after having been matured for twelvo .months previous to shipment. Tho quality was highly spoken of; indeed, surprise was expressed to find that an article of such splendid flavour and texture could be produced in New Zealand, it being pronounced as quito equal to some of the .English ctiiodd&r. As a commercial enterprise, howover,' doubts were entertained as to whether it would bo a safa business proposition to hold large quantities of cheese for Mifficaeiit length of time to allow for maturing. The cost of storing would be coni;idei'ablo, to which must be added losses I'rom natural shrinkage, as well as interest , charges. Most of tho buyors who?e attention was directed to the cheese agreed that the quality was imwli superior, but ivere unwilling to pay moro for it in proportion. The probability is that if there wcro' a largo. mimbov of factories treating their cheese similarly, there would be a general "rise in valuo of Ncw Zealand cheese. This is a matter of speculation to which the agents "would not caro to bs held responsible for any views expressed.
