TSpecially Written for The Dominion.] FJUDAY. Celery Sonp. Salmon Balls. Parsley Sancc. Chip Potatoes. Cauliflower. American Pudding. Sweet Sauce. SALMON BALLS. One tin of salmon, mashed potatoes, 2oz. of butter, a little milk, 1 teaspoon linely chopped parsley, 2 eggs, pepper, salt, brown breadcrumbs. I?reo the salmon i'rom skin and bones, add rather moro of nicely mashed potatoes than there is of salmon'; add butter, milk, parsley and seasoning. Beat tho whites of tho eggs to a stilt" froth and add to tho salmon. I'orm into balls, dip in the yolks of eggs, roll in breadcrumbs and l fry a golden brown in deep fat. Make tlie fat smoking hot before you put tho balls in. This quantity makes a large number of balls.
