Cut the kidnoy in thin slices, season these with salt and pepper, dredge with flour. l'Vy. in the butter, a nice brown, oovor with warm water, and simmer gently one hour. Take out the kidney, cut into small pieces, and return to the saucepan, together with three , pints stock and fcho vegetables whole. Simmer gently one hour. Take out the vegetables, and thicken with loz. butter, blended with ljoz. flour. Boil Ave minutes, stirring all the time. Season to tasto, and 1 serve.
