TO-DAY'S DINNER.
[Specially Written for Tna Dominion.] FRIDAY. Kidney soup. Boiled schnapner. Oyster sauce. Potatoes. Cabbage. Baked jam roly-poly. Sweet sauce. KIDNEY SOUP. Ono ox kidney, 3 pints stock. (If the stock is not flavoured with vegetables, then add 1 turnip, 2 carrots, 1 onion stuck with. 2 cloves, a piece of celery, butter loz., ljoz. flour" salt to taste, 1 teaspoon 6UgaT.) Cut the kidnoy in thin slices, season these with salt and pepper, dredge with flour. l'Vy. in the butter, a nice brown, oovor with warm water, and simmer gently one hour. Take out the kidney, cut into small pieces, and return to the saucepan, together with three , pints stock and fcho vegetables whole. Simmer gently one hour. Take out the vegetables, and thicken with loz. butter, blended with ljoz. flour. Boil Ave minutes, stirring all the time. Season to tasto, and 1 serve.
FOR TO-MORROW. Stock. Vegetables, 21b. leg chops. Parsnips. Dried fmit, soaked overnight. FOR SUNDAY. Artichokes. Stock. Vegetable. Round of beef. Cauliflower. Figs. Apples. Salad. Pastry. 1 Defiance Butter. All Grocers*
