TO-DAY'S DINNER.
(.Specially Written for The Dominion.] WEDNESDAY. Artichoke Soup, lloast Mutton. Boiled Potatoes. Onion Sauce. Swede Turnips. Boiled Apple Pudding. ARTICHOKE SOUP. Half dozen artichokes, 2 largo white onions, a piece of celery, 1 buncli herbs, 2oz. butter, 2oz. rice flour, 2 quarts milk or milk and stock, cayenne and salt, croutons. Prepare and slice .vegetables, draining well; melt half the butter, add the vegetables, and stir without discolouring; add stock, and simmer gently for about one hour, or until tenner; rub through a sieve, and add the milk. Wipe the saucepan clean, melt the rest of the butter, add the rice flour, and cook fot one or two minutes; then add stock .and milk, and stir till it .boils and thickens. Cool well, stirring all the time, for about 5 minutes; add salt and cayenne to taste. Serve willi croutons of fried bread. rOII TO-MORROW. Potatoes. Onions. Stock. About 2 cupfuls boiled rico. Cold mutton. Bananas. Defiance Butter. All Grooers.*
