TO-DAY'S DINNER.
[Specially Written for The Dominion.] THURSDAY. Tomato Soup. Tripo and Mushrooms. Potatoes. Boiled Onions. Banana Fritters. TRIPE AND MUSHROOMS. Two pounds tripe, Jib. bacon, a few mushrooms, a few shallots, 2oz. butter, 2 pints milk, mace, pepper and cayenno to taste, 1 tablespoonful chopped parsley, 2oz. flour. Wash nnd scrape the tripe, put on to simmer just covered 1 with water with a little salt; boil till tender. Chop tho shallots and mushrooms very fine, mix with tho parsley and pepper, cut tho bacon in slices, roll some seasoning up in each slice. When the trine is dono, cut in slices nnd roll a roll of bacon in each slice and tie up with string. Boil gently till soft, lift on to hot dish, remove the string, melt the butter in same saucepan, add the flour when oft' tho fire, add the milk; stir well till it boils and thickens. Season and pour ovor tripo and send to table sprinkled with chopped parsley. FOR TO-MORROW. Stock. Curry Powder. Rice. Schnapper. Stuffing. Stale Bread. Defiance Butter. All Grocers.*
