Cut rabbit into small parts, soak in salt and water for one hour, drain and dry well, dip in the browned flour, salt, and pepper; make tho butter hot, and fry; when nicely browned all over, take out nnd put into u jar; mince shallots finely, and fry them until nicely browned, then add them to' rabbit, with voter, cloves, bacon, lemon rind, salt, and pepper; fasten down so that steam cannot escape; 6tand in a saucepan of boiling water or in a very moderate oven, and cook for about two hours; tako out, the rabbit, .thicken tho gravy with blonded flour, add a littlo caramel to make a rich brown colour, cook for about five minutes, and strain over the rabbit; servo garnished with slices of lemon.
