Cauliflower. Potatoes. Applo Amber Pudding. Cup Custards, SUPPER. Drossed Tongue. Celery Salad. Dressing. Capo Goosoberry Tart. Bavaroiso of Fruit. Cream, LIVER CUTLETS AND MUSHROQM SAUCE. Make required number of outlets by outting up tlio liver into 6utlet-shaped pieces. Dip into flour, pepper and salt, brush, with egg, and dip in breadcrumbs. Have one teaspoon ol' dripping smoking hot in a, pan, fry the cutlets gently for six minutes on one eido and 15 on- tlio other, drain. Put in hot dish, and put to keep hot. Strain off nearly all Hid fat. Then brown some flour with pepper ttnd salt. When brown, add J pint water or stock, then hnvo prepared about 1 dozen mushrooms. Cut them in pieces, add to tho gravy, simmer for 15 minutes very slowly; arrange ttyo cutlets, olio overlapping the otlior round the disu, and pour tho sauco round them. Defiance Butter Is. per lb.
