At the Science Congress, Mr. Crowe, of the Victorian Export Department,; stated that a series of trials conducted by the Department showed that unsalted butter keeps better in cool storage over a lengthened period than does ealted butter. Of the total exported, only 35 per cent, was unsalted, though it usually commands 2s. per cwt. above salted on the English market. < • The next Selonce Congress will behold at Hobart, in January, 1810.
