GOVERNMENT ' EXPERT'S,- OPINION.' ::"While it might pay a'few of the larger cheese factories in New Zealand to take 'up/lithe, manufacture of irhilfc sugar, it Could not, at present, owing to the somewhat, restricted demand, be a good 'pro-, .position,..except for;two or. three of our largest dairy companies.' J; Pedersen, oftho Dairy-Division of,the Agricultural De■partment,' who',,took the opportunity of collecting particulars in regard to the preparation of milk sugar arid "■ its value as a'commercial product, during his'recent visit to Europe.. The present market price for milk sugar is comparatively' high, and is hot' likely ;to. decrease,' but there is not' ah unlimited demand for the product. Milk sugar, aeobrding ,to Mr. Petersen, is mainly "used in the preparation of 'food' for. infants,' for medicinal purposes, and. in-the making of pure cultures for 'lactic; acid, etc. Reciprocity, is "all very, well when not overdone; It is right -that certain things which cannot, bo prOducedrini'New Zealand should'be purchased in other countries, and jvice'versa, but when it comes 'to a collision with 'Dominion''manufacturers'reciprocity should, give'■' way to •patriotism.
