TO-DAY'S DINNER.
(Specially written for The Dominion.) MONDAY. Pureo of Carrot and Turnip. Boiled Mutton. Caper Sauce. Carrots. Turnips. Potatoes. Chocolate Shape. Stowed Fruit. Cream. CHOCOLATE SHAPE. Threo ounces of stick chocolate, 3 gills of milk, sugar to sweeten, a few drops Vanilla essence, loz. gelatine, 2 yolks of eggs. Break tho ciiocolato in pieces and dissolvo it in tho milk, then add the gelatine and carefully dissolve it. Put the yolks into a basin and beat them slightly and pour'on to them the chocolate and milk. Then strain this back into the pan which must be rinsed, and cook over a gentle heat until tho yolks thicken. Care must be taken not, to allow this to boil or else it will curdle. IVhon cooked pour into a basin, add tho sugar and Vanilla. When cold pour into a china mould and when set turn out. FOE TO-MORROW. Liquor moat was boiled in, ljlb. steak, French boans, cheese, apricots, pastry.
