One ox kidney, two quarts of atock, loz. dripping, loz. flour, a teaspoonful of suit, sugar, and mustard, 1 onion, 1 pint of water, IJoz. cornflour. Wash tho kidneys and cut them "into very small pieces; peel tho onions, and cut them finely; make the fat hot, and fry the onion and kidney for live minutes; add the flour, sugar, mustard, salt, and pepper; stir well, ndd 1 pint of stock, and stir until it boils and thickens; simmer for three-quarters of an hour, stirring occasionally; put the slock into a largo saucepan, add to it the kidney, and bring slowly to the boil; blend the cornflour with a little water, and stir it in; boil for five minutes; skim well, and servo. FOR TO-MORROW. Macaroni. • Stock. Ox-tail. Carrots, ' Black Currants. Pastry. Cream.
