Half-ounc© butter, Joz. flour, 1 pint white stock, salt, 2 yolks, J gill cronm, J pint milk, garnish, 1 t'ablespoonful peas, 1 tablespoonful carrot cut into pea shapes, 1 tablespoonful cucumber cut into pea shapes. Have the garnish cooked in separate pns of boiling, salted water. Melt tho butter, add the flour, and mix together. Add the stock gradually, aiul boil well. Cool slightly. Mix the yolks, cream, and milk together. Strain into the soup, and cook gently without boiling until tho jolks are thickened, Add tho garnish, find serve. FOB TO-MORROW. Lettuce. Sorrel. Cucumber. White stock. 21b. fillet of beef. French beans, Gooseberries.
