fSpoolalij writtou for I'm Douinioh.) MONDAY. Barley Somp. Steak a.nd Kidney Pie. Potatoes-. French Beans. Coconut Pudding. COCONUT PUDDING. Three ounces dessicated coconut, loz. butter, 3 eggs, 4-P'i't milk, 3 tablespoonfuls sugar, i teaspoouful vanilla essence, some short crust or puff pastry. ■ Warm the milk with tbo butter; pour over the coconut and ono toblcapoonful sugjir. Allow this to stand hnlf an hour; then add tho yolks (beaien)- and the vanilla. Roll 'out the pastry, and lino a small piedisli, which must bo buttered at the bottom and sides, aoid the edges wotted to prevent the pastry slipping inside. Ornament tho edgo with cut leaves, pour in tho coconut, and bake for half an hour ot until set. Whip up the whites of tho eggs with a pinch of ea.lt until quite stiff, then whip in. briskly two tnblespoonfuls of castor sugar. Pilo on the pudding, and sprinkle -with coconut; Put in a slow oven until set. Serve hot or cold. FOR TO-MORROW. Stock, neck of mutton, 1 tablespoonful green peas, carrots, turnips, cabbage, fruit for etewing, sago.
