Half lobster, cooked, 1 quart fish Btock, 2oz. butter, 2oz. rice-flour, 1 onion, i carrot, 1 bay leaf, sprig parsley, cayenne popper, salt, lemon juice, 1 teaspoonful anchovy essence, i gill of cream, loz. lobster butter. Rcmovo the meat from the lobster and reserve the best pieces, wash and break half the shell, melt the butter, fry the onion, carrot, bay leaf and parsley, add tho rice-flour and the shell, add tho stock by degrees and tho broken pieces of lobster, simmer for id minutes mid strain through a hair sieve. Reheat, add the anchovy essence and cronm, whisk in tho lobster butter gradually without boiling, and add tho remainder of tho lobster cut in neat pieces. LOBSTER BUTTER. Ono ounco butler, 1 tnblespoonful of tho livo spawn. Pound and rub through a hair siovo. • FOR TO-MORROW. Ox-tail. Two Pounds Steak. Ono Pound Tomatoes. Cauliflower. Dates.
