[Specially nritten for Tux Douinion.) MONDAY. Hico Soup. Cold Lamb. Lettuce and Tomato Salad. Potatoes. Vanilla Soult'lo. Jam Snuce, VANILLA SOUFFLE. Ono ounco butter, loz. flour, 1 gill milk, ) loz. sugar, vanilla essenco, 3 yolks and 4 ! whitoa of eggs. Tie a double _ band of buttered pnpor round tho 6utsidc of a eaulflo tin and place a round of greased paper in tho bottom. Molt tho butter in a saucepan, stir in the flour, add all the milk, and boil until tho mixture is thick and leaves tho eitles of tho pan clean. Cool slightly. Add the sugar and beat in tho yolks ono by one. Stir in the flavouring and a little of the beaten whites, then fold in the remainder as lightly n's possible. Steam very gently until "the 6oufflo is well risen, and firm to.tho touch, from three-quarters to one hour. Turn out and servo with jam sauce. FOR TO-MORROW. Celery, stock, neck of mutton, capers, carrots, turnips, gooseberries.
