TO-DAY'S DINNER.
[Spoolally written for Tub Dominion.] TUESDAY. Green pea soup. Roast shoulder of : mutton. Onion sauco. Potatoes, French beans. Stowed pears. Baked custard. ; GREEN PEA SOUP. One pint green peas, a good handful of spinach, 1 peppercorns, 1 good teaspoonful of salt, 1' quart of good whito stock, J pint cream, yolks of 2 eggs, a sprig of mint. Have the stock Coiling, throw into it } pint of peas, tlio spinach washed, and picked peppercorns find salt. Boil twenty minutes or until tender, rub through a fino wire sieve, boil up and add the cream and yolks; koep hot without boiling, and just beforo serving add the remainder of the peas, which must be boiled soft in a little stock containing salt. FOR TO-MORROW. Half-pint lentils. Cold meat. Cold potatoes. Cauliflower, Savoy biscuits. Two small lemons. Short crust.
