Line a small piedish with the pastry; decorato tho edges with cut leaves, etc.; peel, core, and cut tho apples in half quarters, put m an enamelled stowpan with a, tablespoonful of water, and simmer gently until soft; add the sugar, butter, lemon, and yolk of eggs; stir until thoroughly mixed, but do not boil; -rub through a wire sieve, put the pulp into the prepared dish, bake 30 to 40 minutes, or until tho mixture is set; when done, whip up the ■whites of tho eggs, add to them one tablespoonful castor sugar; pile on top of the pudding in the centre, decorato with candied fruits; bake until the whites are set, in a slow oven..
