TO-DAY'S DINNER.

[Specially written-for Tue Dominion.] WEDNESDAY. Kidney soup. Braised loin of mutton. Potatoes. Cauliflower. Caramel pudding. Stowed gooseberries. CARAMEL PUDDING. Two ounces breadcrumbs, 3ozs. lump sugar, 2 eggs, 207.5. Savoy biscuit-crumbs, 102. castor sugar, 1 pint inilk, I tcaspoonful essence of vanilla. Put the lump sugar into an old pan, add the tablespoonfui of water, host until it turns a coffeo colour, shaking the pail gently to prevent it from burning. Then add the milk, stand over a small gas jet until the sugar dissolves in tho milk; strain over the biscuit and breadcrumbs, add thfc castor sugar, vanilla, yolks of eggs. Lastly stir in the whites of egg whipped to a stiff froth. Butter a mould, and dust with sugar; pour in tho mixture, allowing it to come within an inch of tho top. Cover with buttered paper and steam very slowly about one hour. Serve with arrowroot sauce. ARROWROOT SAUCE. Ono dessertspoonful of arrowroot, 1 tablespoonful of sugar, i pint of milk or water, a little'flav6uring. Mix the arrowroot with a little of the milk cold, add. the remainder boiling, pour back into tho saucepan with tho sugar, and boil four minutes. Add the flavouring. FOR TO-MORROW. One pint haricot beans. Celery. Pickled pork. Parsnips. Gooseberries. Suet. Cream.
