Line and ornament a small pie-dieh with short or puff pastry. Beat the butter and 207,. of tho siisar to n cream, add the biscuit crumbs, the yolks {beaten), and milk, mid lastly stir in.the grated rind of tho oranges nnd tho juice, Pour quickly into lite pic-dish nnd bake £ hour or until set. Whip up tho whites of the «ggs to a stiff froth, add the sugar and whip well, pilo on top of the pudding in the contra, sprinkle with the pistachio 'huts, blanohed and minced, put back into a slow ovpn and bake until set; it may bo very slightly browned.
