TO-DAY'S DINNER.
[Speplally written for Tuj DoirtHlON.] TUESDAY. Lentil Soup. Shoulder of Mutton. Potatoes. Onions. Sweet Omelet, Stowed Rhubarb. Boiled Custard. SWEET. OMELET. • Two eggs, one tablespoonful heated urn, one dessertspoonful castor sugar. Have an omelet pan "proved" and well greased with clarified butter. Separate the whites from the yolks of the eggs, beat tho yolks and sugar together until creamy. Beat the whites stiffly, and fold thorn lightly into the yolks and sugar. Pour this mixture into tthe omelet pan, and shake tho pan over a gentle heat until tho omelet is beginning to set and rise, Then place the- pan in. a steady oven, aad cook until tho omeiot is* well risen artd of a light brown colour. When ready, turn the omelet out on to a piece of : sugared paper, put tho jam in .the centre, .foldfover,-and serve at once.
