TO-DAY'S DINNER.

' [Specially written for The Dominion.] WEDNESDAY. Lentil Soup. Mutton Cutlets. Tomato Sauce, Potnto Chins. Cauliflower. Blakemoro Pudding. BLAKEMORK PUDDING. One sponge cake, rind and juice of half a lemon, two taUespoonfuls jam. PASTRY. Three ounces cornflour, 4oz. flour, 3oz. butter, 2oz. castor sugar, 1 yolk of egg, a little milk. Rub tho sponge cake through a wire sieve, then mix the crumbs with the grated Jemotl rind, strained lemon juice, and the jam. Sievo tho flour and the cornflour; rub the butter in until like line breadcrumbs; add the castor sugar; break up the yolk, of egg with a little milk, and with this mix the dry ingredients to a stiff dough. Turn on to a floured board; knoad liglitly; roll tho pastry about a. quarter-inch in. thickness; lino n greased plate with the pastry, then spread Ilio mixture over; knead iip the trimmings of pastry, roll into a round, wet round the edges of the plate with water; spread tho round of pastry over tho mixture; flute and decorate the edges of the pudding; further decorate with four leaves of pastry; brush with white of egg, sift with sugar, and bake ill a quick oven about 30 minutes.
