TO-DAY'S DINNER.
[Specially written for Tue Dominion.] WEDNESDAY. Soup Maigrc. Beef Steak ami Kidney Pie. Potatoes.' Cabbage. Newcastle Pudding. NEWCASTLE PUDDING. Two eggs, I heir weight in butter, sugar, and Hour, lmlf-teaspoonful baking powder, a little milk. Cream tho butter and sugar thoroughly, add one egg anil a dessertspoonful of flour; mix well; add the second egg with a little flour; then add tho rest of the flour, mix it well, and use a little milk if necessary; the baking powder should be added with tho last tablespoonful of flour; turn the mixture into a buttered bowl; cover with a greased paper; steam for about one liour; turn the pudding out and pour round jam sauce. JAM SAUCE. . Two tablespoonfuls raspberry jam, 1 gill of water, 4 or 5 lumps of sugar, rind and juice of half a lemon, a few drops of carmine. Put all except the carmine into a pan, and bring to the boil; simmer from 7 to 10 minutes; skim frequently; add a few drops of carmine to colour and strain. FOR TO-MORROW. Celery. Stock. Curry Powder. Neck of Mutton. Rhubarb. Brown Bread. j Cream.
