[Specially written for The Dom.vios.] MONDAY. Carrot soup. Stuffed steak. Potatoes Cauliflower. Baked bread and butter " pudding. Stewed fruit. CARROT SOUP. Half dozen medium young carrots loz butter, loz. flour, 1 stalk eolerv, n bunch of sweet herbs, Jib. lean ham, i mod-sized onion, 1 (mart brown stock; salt, I teasnoonfitl peppercorns. Slice nil the" vegetables, nnd fry them in the butter. Add tho (lour, stir, and add the stock, and then the remaining ingredients. Boil one hour. Hhl) the pulp of the vegetables through a sieve, reheat, nml serve. \ garnish for this soup may be made' bv stripping off the red part from two carrots, cutting this into very fine strips about 1 inch long, and boiling 5 minutes m water. Drain and add to soup when serving. FOR TO-MORROW. One pint Haricot beans. Celery. Loin of mutton. Spinach. Breadcrumbs.
