TO-DAY'S DINNER.
[Specially written for Tub Dominion.l TUESDAY. Lentil eoup. Stewed ox toil. Potatoes. Spinach, bwoot omelet. Stewed rhubarb.. Boiled custard. SWEET OMELET. Two eggs, ono tablespoonful heated jam, one dessertspoonful castor sugar. Have an omelet pan "proved" and well greased with clarified butter. Separate tho whites from tho yolks of tho eggs, beat tho yolks and sugar together until creamy, lieat tho Whites stiffly and fold them lightly into the yolks and sugar. Ponr this mixture into the omelet pan, and shake tho pan over a gentle heat until the omelet is beginning to set and rise. Then place the pan in a steady oven and cook until the omelet is well risen and of a light brown colour. When ready, turn the omelet out on to a piece of sugared paper, put the jam in tho centre, fold over, .Unci servo at onco. FOB TO-MOHROW. Stock, loin of pork, apples, cauliflower, lemons, breadcrumbs, suet.
