THE SIZE OF CHEESE.
IRREGULAJtITY VERY NOTICEABLE. The irregular size of New Zealand cheese is very noticeable on the English market, says ilr. )Y. Wright, inspector of New Zealand Dairy Produce in London, in tho course of his annual report. Mr. Wright adds: "I would recommend that those companies who are using the" smallersized hoops should give their attention .to the lising of the 80lb. hoops as opportunity offers. Not only is there a likelihood of obtaining better prices for the larger-sized cheese, but it will be found more economical in the cost of production. I believe that Cheddar cheese made in the 801b. hoop is the most profitable sizo for our producers to make. There is a certain limited market for 'medium' — these are similar in size and shape to the 'prinloiti'; also for "loaf cheese, wcietimes termed 'truckles' here. I do not think it advisable that these sizes should be made for export unless on the advice of the agents or by orders of the buyers."
