TO-DAY'S DINNER.

rSpeclally written for Tue Dominion-.] TUESDAY. Pea Soup. Roast Leg of Mutton (boned and larded). Baked Potatoes. Cabbage. Paradise Pudding. ' LEG OF MUTTON (BONED AND LARDED). One leg of mutton, ] good teaspoonful minced parsley, i lemon rind (grated), 1 teaspoonful salt, 'h teaspoonful, pepper, a piece of celery, a bunch of parsley, 3 tablespoonfuls breadcrumbs, lor., minced bacon, a dust of nutmeg, :! small eggs, 1 carrot, 1 turnip, 1 onion, sweet herbs. Prepare the force-meat of the breadcrumbs, minced bacon, nutmeg, parsley, lemon rind, salt and pepper, mixed all together with 2 eggs. Bone the mutton to tho first joint, fill the cavity with tho force-meat. Lard it neatly with small lardoons of bacon, cut about one inch long, and | inch thick. Lay at the bottom of tho s'.ewpan the carrot, turnip, onion, celery, all cut up, with the herbs (Slid seasoning. Lay tho leg on top of these vegetables, pour round enough water to come half-way over the mutton, but do not cover; simmer this slowly two hours; lift out, and place in the oven about half hour to brown. Reduce the gravy by fast boiling, and remove the fat. Dish tho mutton, strain over a littlo of tho gravy, and serve the remainder in a tureen. If liked, a few mushrooms'may be used to garnish the dish, and they should be stewed in the gravy for ten minutes after the mutton has been removed. FOR TO-MORROW. Celery. Stock., 21b. Chops.
