TO-DAY'S DINNER.
[Specially written for The DoiiisnoK.] MONDAY. I Clear mulligatawny t,oup. Braised loin I of mutton. Potatoes. Cabbage. Boiled rhubarb pudding. Cream. BRAISED LOIN OF MUTTON. Three pounds loin of mutton, ono stalk of celery, a. bunch of sweet herbs, one ounco butter, pepper, salt, and cayenne, one small turnip, ono carrot, two or tlirco cloves, a sprig of parsley, one ounce flour, | about one dozen button mushrooms. Remove the bone from the mutton, tho- : roughly rub it with one teaspoonful of salt, quarter teaspoonful of pepper, and a few grains of cayenne mixed. Roll up and tie into a neat roll. Cut up the oelery onion, carrot, and turnip, and lay them in the bottom of a slewpau with- the sweet herbs and parsley. Lay tho mutton, on the top of.lheso, and pour round enough water to three-parts cover it, and simmer slowly one and a half to two hours. Lift the mutton into a dripping tin, with a few tablespoonfuls of gravy, and set in a brisk oven until nicely brown. Strain the gravy and skim off the fat. Heat the butter m a saucepan, add the flour, and brown, then add the gravy gradually, a little pepper and salt, and mushrooms, skinned. Boil eight minutes. Dish the mutton. with tho mibhrooras round and the gravy strained over. FOR TO-MORROW. Stock, six or eight cutlets, half a, pint of cream, onions, French, beans, datei suet. '
