_ Sir,—Wo notice that during the session in the Houso there has been a discussion in referenco to puro malt vinegar, and that the member for Dnnedin North, Mr. G. M. Thomson, mado tho assertion that practically no malt vinegar was wing manufactured in New Zealand, and that there was practically no difference lietwoen the pure malt product and that made from acetic acid. Wo might inform the lion, gentleman' that he can never have examined tho two articles from a health point of view, or it, would he impossible for him to say that a vinegar such as we manufacture brewed from inalt and sugar only could bo the samo as on article made from acetic acid, tho latter product being made, in <i great majority of cases, from acetate of soda and sulphuric acid. In New South Wales manufacturers of acetic acid vinegar havo to label their product "vinegar substitute, made from acetic acid." We invite the hon. gentleman or any of his friends to come along to our warehouse and view the manufacture of our puro malt vinegar, when wo feel suro ho will immediately alter his views on this very important subject.—We arc, etc., A.
