THE VALUE OF FREEZING.

" MEAT AFTER ELEVEN COLD MONTHS. A loin of mutton and an ox tail which had been etored by the Waingawa Meat Company in one of tho freezing chambers of the Fresh Food and Ice Company, Ltd., for nine months and eleven months respectively found a testing plate on tho dinner table of a representative of The Dominion during tho week-end. The joints were taken out of tho cool chambers on Friday and after being thawed tho mutton, presented tho appearance of fresh, juicy flesh which had just been slaughtered. The colour was bright and •perfect. The ox tail also looked as though it had como from the slaughterhouse that day instead of from the freezer after an eleven months' stay. Tho ox tail was cooked and eaten on Saturday and the writer, who had been askud to carry out the eating test, can only pronounce the <jno verdict—excellent. ]n fact it would bo quite impossible to distinguish the tail of eloven months from one that had never been in a freezer. Tho ■frozen mutton was handed over :o i kother pressman for table trial and the report forthcoming yesterday morning was that tho mont was as tonder and juicy as any that had ever been placed on. tho table of the family in question. ~ Taken, as a whole,, farmers aro protty "canny," and aro not given, to rushing into a thing without weighing tho "pros and cons." Every practical Dairy Farmer who goes into tho question of hand versus machine milking is forced to the conclusion that tho latter is-by far tho most profitable. And in considering the installation of a Milking l'lant, the arguments put forth in favour of an "Anderson" Oil Engine for supplying driving power, convince him that it is< the best. 'Anderson" Oil Engines aro very simple, and run all day ou a low consumption of fuel with little or no attention. Make certain of getting an "Anderson" F.ngino with your Milking Plant. Full particulars obtainable from Andersons, Ltd., Christchurch, and Wellington.—Advt. A WINNER OF COMPETITIONS. The Egg-laying competitions for 1910-11 and 1911-12 were both won by pens reared on 'A. and P." Chick Raiser. Tho first essential for profitable poultry keoping.
