Six ounces bread-crumbs, 4oz. castor sugar, loz. preserved ginger (cut up), Sr.z. butter, -J-gill ginger syrup, juice of cue lemon (strained), J-leaspoonful ground ginger, 2 eggs (yolks and whiles separated), hard sauce. Mix the lemon juice and ginger syrup; cream tho butter and sugar, beat in the yolks of the eggs, and add (he bread-crumbs, ground ginger, preserved ginger, ginger syrup, and lemon juice; whisk the whites of eggs to a stiff froth, fold them lightly in, and put tho mixture in a greased basin; cover with greased paper and steam for an hour ard a half. HARD SAUCE. Two ounces fresh butter, loz. castor sugar, i-teaspoonful essence: of vanilla, 1 white of egg (stiff whisked). Cream the butter and sugar until they are vnue; add tho flavouring and stiffly-whisked white of egg; heap tho mixtura in a glass dish, and put it away in a ctol place to harden. FOE TO-MORROW. White Stock. Shoulder of mutton. Leeks. Stale Sponge Cake. Marmalade.
